We ran into an issue with mortars that spawned in on the rice paddies. We've been destroying those with either breaching charges or satchel charges. On water, it doesn't appear that we can set the charges. So for mortars, we have been picking them up, placing them on dry land, then blowing them up with the charges.
As for dealing with the AA/Arty inside rocks, we resorted to having one player login as admin, turn on Zeus mode, find the offending emplacement on the map view, selecting it, and deleting it with the delete key. We've only had the one AA stuck inside a rock so far, at Cu Chi, but we're only out about 1 hop away from the airstrip so far (Da Nang, Ba Ria, Saigon, Cu Chi)
It took us a bit to figure out admin mode, so I'll post how to do that, too, in case it helps anyone. On our linux dedicated server, there's a server.cfg. We added a line and restarted the server:
passwordAdmin = "hunter2";
as well as added the SteamID (the UUID string of numbers) for the person who would be our admin to the admins[] list, like so:
admins[] = {"12345123451234512"}
I'm not sure if we needed both lines.
Then in the game, to get the server console up, you open the text chat box, and type
#login hunter2
After that, the default key for Zeus mode is y
